Carrot Cake: Could It Cookie?

It’s almost officially spring! Our clocks have moved forward, the first trees are starting to bloom here in the South, and there’s one cake on everyone’s minds: carrot cake! This great cake is synonymous with spring because of course, carrots and bunnies, they just go great together. And by adding carrots to a cake, it’s a match made in dessert heaven. Whether you choose to put the signature cream cheese icing in between the cookies like sandwich cakes (as pictured here) or on top of the cookies like a standard frosting, we’re betting you’re getting as hungry as we are looking at these awesome spring treats. Another reason to love carrot cake cookies is that they’re super portable and much easier to distribute to guests or place in your child’s lunchbox than a slice of cake would be.

Firstly, we’ll start with the basics, Southern Living’s Best-Ever Carrot Cake, pictured below. Also, you can check out the video as well to see how to make it.

But if we’re talking cookies, then we’re going to be highlighting these bakery-worthy sandwich cookies:

If you’re a huge carrot cake fan, this time of year is your oasis! There are plenty of ways to enjoy this type of cake, and we’re always thrilled to share them with you. And while we’re on a carrot kick, be sure to wash this classic dessert down with the most springtime cocktail of them all, the Peter Rabbit.
