It’s almost officially spring! Our clocks have moved forward, the first trees are starting to bloom here in the South, and there’s one cake on everyone’s minds: carrot cake! This great cake is synonymous with spring because of course, carrots and bunnies, they just go great together. And by adding carrots to a cake, it’s a match made in dessert heaven. Whether you choose to put the signature cream cheese icing in between the cookies like sandwich cakes (as pictured here) or on top of the cookies like a standard frosting, we’re betting you’re getting as hungry as we are looking at these awesome spring treats. Another reason to love carrot cake cookies is that they’re super portable and much easier to distribute to guests or place in your child’s lunchbox than a slice of cake would be.
