Taco Pot Pie

 

Whenever a recipe title is two food items put together, such as Pepperoni Pizza Baked Potatoes, or Ice Cream Bread, you know it’s going to be good. But a Taco Pot Pie? Yes, please! This recipe is simple, fast, and so tasty.  The ingredient list includes some of our favorite taco night staples and also includes a bag of corn chips that you get to crush up with your hands! Spoiler alert: That step is a lot of fun.

TACO POT PIE

  • 1lb lean ground beef
  • 1 medium onion, chopped
  • 8.0z pre-chopped pepper medley (red, green, yellow)
  • 15. oz can of corn, drained
  • 1 package of taco seasoning
  • 2 tbsp of hot sauce (such as Frank’s Original)
  • 8.0z shredded Mexican cheese blend
  • 1 medium package of corn chips
  • 1/2 stick of butter
  • Refrigerated pie crusts (2)

GARNISH

  • 2 tomatoes, sliced or chopped
  • 1 avocado, sliced
  • 1 head of lettuce, sliced or chopped
  • Salsa

To get started, first preheat your oven to 425 degrees. Next, cook the ground beef over medium heat in a deep skillet on the stove and then drain. Follow the directions on your taco seasoning packet, or simply add 1/2 cup of water per 1 packet of seasoning. Add in 2 tbsp of hot sauce. Next, add your chopped onion, peppers, and corn to the skillet, and cook another 5-10 minutes to soften the vegetables and fully coat with the seasoning. Take the skillet off of the heat.

Open the bag of corn chips, flatten the air out of it, and then crush the chips with your hand while keeping the open end closed. Crush the chips until the pieces are all evenly small. Measure out 2 cups of the crushed chips and place into a bowl. Next, add half of a stick of melted butter to the mixture and stir, coating the crushed chips evenly.

Coat a deep pie pan with cooking spray and use one refrigerated pie dough crust to line the bottom . Sprinkle evenly with a layer of cheese. Alternate with layers of the taco beef mixture, crushed chips mixture, and cheese, until all of your ingredients are gone. Top with the second refrigerated pie dough crust, and fold the edges neatly. Cut small vents into the crust and place into the oven for 30 minutes.

When the crust is a nice golden brown, the pot pie is done. We love this new comfort food twist on Taco Night. If you try it out yourself, let us know how you liked it below in the comments. Enjoy!
