There’s someone in every family who thinks they’re a great cook and no one has the guts to tell them their food is actually horrible. Bless their hearts. They’re so sweet and they try so hard, but every meal ends with everyone pretending to be stuffed after only finishing half of what’s on their plate. But what happens when said person offers to host Thanksgiving this year and everyone reluctantly agrees? Think Kitchen Nightmares meets Worst Cooks in America. Yep, that bad. You push the mystery mush they call “green bean casserole” around on your plate while gnawing on dry, overcooked turkey and barely edible mashed potatoes. Of course you’re grateful for having a lovely family and food on the table, but by the time it’s all said and done and you return home for the night, hunger sets in. Enter Chicken Tortilla Soup, the best Plan B you ever had.

Made with rotisserie chicken, canned tomatoes, and a handful of other pantry staples, this heartwarming soup is the better alternative to raiding the pantry for chips and cookies after the Thanksgiving “feast” turns out to be a dud. Simply combine everything in a Dutch oven, let it simmer for an hour, and enjoy bite after bite of this warm, spicy Mexican favorite. Turkey, who needs it?
