While I’m excited that fall is almost here, I think this time of the year is perfect for using up the last of those summer veggies and fruits. Zucchini are in season until about mid-September, so you only have a few weeks left to make your favorite zucchini recipes!
Zucchini can be added to so many dishes. They work with both sweet and savory flavors. I’ve seen them in salads, side dishes, cakes, brownies, and even cookies. But because it’s back-to-school season and many parents try to gives their kids healthy breakfasts and snacks, today we’re talking about Kathie’s Zucchini Muffins.
These muffins are a popular recipe on our site (they have over forty 5-star ratings), and they couldn’t be easier to make! You just combine the dry ingredients like flour, sugar, cinnamon, and baking powder in one bowl, and combine the wet ingredients like grated zucchini, milk, oil, and an egg in another bowl. After mixing together the wet ingredients, you add them to the dry ingredients and stir them together. You don’t need a mixer or anything fancy. Just some bowls and a spoon! Before going into the oven, the muffins are sprinkled with a little cinnamon and sugar. They bake for about 15 minutes, and then you’ve got a healthy breakfast or snack!
