Cake of the Week: Chocolate-Caramel Ice Cream Cupcakes

What could be better on a hot summer day than your own personal serving of cake, ice cream, and plenty of drizzly chocolate? Not much! These Chocolate-Caramel Ice Cream Cupcakes are a tasty summer treat and are fun for the whole family. Your kids will loving making these and topping them with their favorite sprinkles and candies!



These cupcakes are so easy to make. To keep things simple, this recipe calls for a boxed cake mix, caramel ice cream, and Milky Way candy bars. After mixing up the cake mix, fill each cavity in the cupcake pan about half full. Let the ice cream soften so that it’s slightly melty and easy to spread, add in some chopped chocolate, then place a scoop on top of the cooled cupcakes. When you’re ready to serve these summer treats, make some fresh whipped cream, put a dollop on each cupcake, and top with chopped Milky Ways, chocolate syrup, and chocolate sprinkles!

Chocolate and caramel are two flavors that always go well together, but you could switch these up and use whichever flavors you want. If your favorite ice cream is mint chocolate chip, use that instead and top with Andes Mints. Or if your favorite ice cream is chocolate chip cookie dough, go for that with some crushed cookie pieces on top. The possibilities are endless!
