Nothing says summer like a tall, chilled glass of lemonade. The same can also be said for sweet tea, but it’s even better when they’re both in the same glass. And if you think it can’t get any better than that, just take a look at this Sweet Tea-and-Lemonade Cake from Southern Living’s August issue. This is what you should make when life gives you lemons, friends.
This sheet cake gets its sweet tea flavor by steeping tea bags in boiling water for 10 minutes, and then using a cup of that in place of the usual milk or buttermilk. The recipe calls for both granulated and brown sugar to get that perfect balance of sweetness. This cake is covered in a Lemonade frosting that’s actually a cream cheese based frosting, so it has that extra creamy texture. Fresh lemon slices are then placed on top of the cake and it’s done!
What’s great about sheet cakes is they’re a lot easier to transport that layer cakes. I’m always worried about layer cakes falling over or sliding around in the car, but you can keep sheet cakes in the pan and just cover them. Even if you do transfer it to a tray or platter, it’s still less likely to fall over during a car ride. Having said all of that, this cake really is the perfect cake for a summer party, picnic, or celebration!
