Cake of the Week: Hummingbird Cake

Start your week off right with this Hummingbird Cake! Not only does it have the amazing flavors and ingredients of a classic hummingbird cake, it’s also incredibly easy to make. You don’t even need a mixer or whisk to whip up the cake batter. Stir it all together, pop it in the oven, and wait for the incredible scents of pineapple, banana, and cinnamon to fill your kitchen!

The main thing that makes this cake so easy is that the batter is prepared in one bowl instead of two. Many cake recipes call for the dry ingredients (flour, baking soda, cinnamon, etc.) to be mixed in one bowl, and the wet ingredients (eggs, oil, extracts, etc.) to be mixed in another. Then the dry ingredients are added to the wet ingredients alternately with milk or buttermilk. With this Hummingbird Cake recipe, all of the dry ingredients are combined in one bowl, then you gradually add the wet ingredients, and then the pineapple, bananas, and pecans. So simple!

As if those flavors weren’t enough, the whole cake is frosted in a luscious cream cheese frosting and sprinkled with more pecans. The cake is wonderful just by itself, but when paired with this frosting, it transforms into a rich and indulgent treat!
