Have you ever heard of a semifreddo? I hadn’t until recently. A semifreddo is a frozen Italian dessert that is similar to ice cream, but a little fluffier. Semifreddo actually means “half frozen.” Like ice cream, it’s kept in the freezer, but it never gets rock hard like ice cream can. It’s soft, creamy, and easy to cut into. So it’s frozen, but texture-wise, it isn’t (hence the name). Sounds pretty good!
Today we’re featuring this Strawberry Semifreddo Shortcake from Southern Living. It’s more of a fun spin on the classic semifreddo, and it sure looks good! It has a crust of lady fingers, a layer of strawberry ice cream, a layer of strawberry sorbet, and to top it off, a layer of a strawberry-marshmallow cream.
What’s fun about this Semifreddo Shortcake is that it’s so colorful, and you could use any combination of ice cream and sorbet that you want! You could also use different flavors for each layer.
