I have a confession: Valentine's Day is not my favorite holiday. Not even close. I've had type 1 diabetes since the age of 12 and spent a lot of years without a boyfriend. (Now I'm happily married, but that's another story.) When you cannot eat chocolate and you don't have a boyfriend, Valentine's Day is just nothing to get excited about.
But I'm feeling more positive about Valentine's Day because (1) the "rules" for diabetic eating have loosened up a bit and (2) there are some really good low-sugar chocolate options out there. Turns out, it's OK to have a little bit of sugar, as long as it's in moderation and you adjust your insulin dose to account for it.
I did pick up a box of Pillsbury Sugar Free Brownie Mix at the grocery store last week and was pretty pleased with the results. The brownies were real fudgy and moist actually tasted like regular brownies. The mix has Splenda and malitol, so if you are sensitive to either of those things, these might not be for you. One brownie (1/12 of the recipe) has 150 calories and 23 grams of carbohydrate. Even though the label says that one brownie has O grams of sugars, you still have to count the carbs from the other ingredients. I did like these brownies, though, and am treating myself to one each day all week long.
