Picture what you’ve always wanted in life. Ahh, you thought of Funnel Cake Ice Cream Sandwiches, too? So did we! That’s, like, incredibly strange.
But how perfect. So, here they are: Two perfectly airy-crisp funnel cakes sandwiching vanilla or chocolate ice cream. The hardest part about this whole recipe is waiting for the funnel cakes to cool after they’re hot of the fryer so the ice cream doesn’t melt everywhere when you stack it on. Your self-control will be tested. Your will might waver, but it is–we promise–worth it.
First: make your ice cream. Start with your favorite brand and let it soften a bit, then stir in whatever custom add-ins you like (we went with Reese’s or M&M’s), and spread it onto a rimmed baking sheet. Then freeze that ice cream slab until solid.
Then, whisk together your funnel cake batter, pour it into a squeeze bottle for easily controlled funnel cake-ing, and fry away. Create your golden glorious ice cream nests–victory is soon to be yours.
Lastly, cut your ice cream into rounds using a biscuit cutter (reserving the remaining ice cream “scraps” for another use, like more Funnel Cake Ice Cream Sandwiches) and sandwich in-between two mini funnel cakes. You can roll the sides of the sandwiches in sprinkles or even crushed Oreos—or not, it’s your call.
Sprinkle the tops with powdered sugar, if you like. And that’s it. Exactly what you pictured, right? Dreams really do come true.
