Oatmeal and yogurt are great breakfast options, most of the time. I’ll even grab “breakfast cookies” to mix it up on mornings that the “most important meal of the day” is simply a nonstarter.
But this weekend, my kiddo was clamoring for popsicles and, after doing a little research, I realized that she could have her popsicle “treat” for breakfast and get plenty of protein from the Greek yogurt I’d make them with.
Here’s what I’m making this week to make breakfast into a party.
This pop has 2 tablespoons of sugar in the recipe, but spread out over the 8 pops it makes, that makes me feel better than the spoonful of brown sugar I plop into my oatmeal each morning.
Frozen raspberries, fresh strawberries, and low-fat Greek yogurt dominate this pop. A little honey for sweetness and you’re pretty much done.
