To make Celery Leaf Pesto (which is amazing on this halibut, by the way), you combine the leafy tops of your celery stalks (reserve the stalks to transport pimiento cheese to your mouth at a later date) with garlic, olive oil, salt, parsley, and lemon juice in a mini food processor and watch the magic happen.

The best part? It’s a bargain to make. Instead of picking up an additional herb, like basil, you can make this topping (try it on pizza!) from an ingredient you planned to buy anyway.
