Let me paint a picture for you of my Monday.
I woke up to the sound of my 10-month-old boy turing his crib mobile on and off, a pretty pleasant way to wake up, really, as the plinky versions of Mozart’s best rang through the monitor.
When he wakes up, the marathon begins. Feed him, husband showers, I shower, toddler wakes up, husband feeds kids breakfast, husband leaves, I pack bags, and out the door we go.
The oatmeal I wish I made this morning.
Except this Monday, when everything came to a screeching halt. *Ding* I checked my text message, “Is day care closed all day?” a friend asked?
A quick google search told us that our day care was closed due to a freak felled tree. We did quick parent bartering: If you can cover 30 minutes for me to do a call and grab my laptop from the office and the kids nap during my weekly conference call later, I can swing it.
Cut to me sitting on the couch, both toddler and infant miraculously napping at the same time while I pound out emails, when it dawns on me that dinner has not even dawned on me until right now, about an hour from when my kids will try to climb into their chairs saying, “Eat eat!”
Parenthood is all about glamour, I tell you.
I knew I had one more fun math equation ahead of me to solve for: Pasta + X = Happy Kids (bonus points if X was in my pantry and didn’t necessitate a trip to the store).
I stand by “Luck” as a valid weeknight ingredient
Thankfully, I found an amazing recipe that fit what was already in my pantry. And life doesn’t get much better than that.
