Up to the plate for this week’s #CookWithConfidence post is Spicy Apple-Glazed Chick ‘n’ Grits Gorgonzola from Cooking Light! This unique take on chicken dinner has gotten rave reviews on our site, and I’ve had an itching to try it out myself for awhile. Let’s get started!
This recipe calls for chicken breast halves, apple butter, spicy brown mustard, green onions, chicken broth, quick-cooking grits, Gorgonzola cheese, sour cream, and nutmeg. Once I gathered my ingredients, it was time to get started.
I love that the only prep work involved in this recipe is making the apple butter glaze for the chicken. Other than that, there’s no crazy chopping or prepping required! As the oven heated, I mixed up the glaze and brushed it over the chicken breasts. Once the oven was ready, I put the chicken in, set the timer for 20 minutes, and started on the grits.
The grits are really easy! I boiled the chicken broth, added the quick-cooking grits, and let them simmer on low heat for 5 minutes. Pro tip: Don’t start on the grits until 10 minutes before the chicken is done cooking. I started mine before the chicken went into the oven, so they had to sit for 20 minutes and weren’t quite as creamy as I would have liked. Even so, they were delicious!
I had decided to serve the meal with asparagus, so I sautéed a bunch in olive oil and salt and pepper a few minutes before the chicken was finished cooking. Don’t forget to chop up the green onion for garnish. It really makes a difference.
Voilá! In less than 30 minutes, I had a company-worthy dinner on the table. If you’re looking for a quick, delicious chicken dinner to add to your weeknight rotation, I highly suggest trying it out. The apple butter and spicy brown mustard glaze gives the chicken great flavor, and the gorgonzola and chicken broth make the most creamy, savory grits. It really was fantastic!
