Cook With Confidence: Parm-Style Chicken Sliders

For this week’s edition of #CookWithConfidence, I chose to prepare these adorable Parm-Style Chicken Sliders from Cooking Light’s August issue. I was craving some Italian flavor, but not in the mood for a heavy pasta dish, so these mini sandwiches were just the ticket. Luckily, the recipe called for many pantry staples, so I only needed to purchase the onion, fresh oregano, garlic cloves, ground chicken breasts, marinara sauce, slider buns, shredded mozzarella cheese, and fresh basil.

To get started, I carefully chopped the onion and fresh oregano, and then minced the garlic cloves. Once the skillet was heated up, I sautéed the onion, oregano, and garlic mixture until the ingredients softened, which took a little more than 3 minutes. Next, I transferred the sautéed mixture into a bowl and added chicken, Parmesan, half the marinara, salt, and peppers. I added an extra dash of Parmesan to soak up some of the marinara because I was skeptical about shaping the slightly gooey mixture into patties. After forming the patties, I placed them in the refrigerator for 10 minutes.

While waiting, I prepared a Caesar salad to serve with the sliders, preheated my broiler to high, and arranged the bottom halves of the slider buns on an aluminum-covered baking sheet. To cook the patties, I opted to use a skillet over medium-high heat instead of a grill pan. It took about 10 minutes for the patties to cook (just 5 minutes on each side).

Now for the finishing touches! I placed a patty on each bun and topped them with a spoonful of marina and Mozzarella before putting them in the broiler. It took a little longer than 90 seconds for the cheese to melt, but I just kept a close eye on them until the cheese was perfectly melted. To finish the sliders off, I topped each with a fresh leaf of basil and, of course, the top bun.

Not only were these sliders simple to make, but they were also a scrumptious summery twist on Chicken Parmesan. Even though they’re just bite-sized burgers, there’s something about sliders that makes them more appealing than full-size burgers.
