Watermelon Wonders

What’s not to love about watermelon? The sweet, juicy fruit is perfect for backyard cookouts, beach days, and pool parties. Though it doesn’t get much better than a simple slice of watermelon, I’d like to encourage you to explore all the wonders of watermelon this summer. With the right recipe, you can serve watermelon as a snack, salad, entrée, dessert, or even as a cocktail. You might be hesitant to mix the sweet taste of watermelon with other food flavors, but trust me; it’s worth the risk.

One of my favorite summer salads is this Tomato-And-Watermelon Salad. Doesn’t it just scream summer? To prepare this salad, just combine watermelon and tomatoes in a large bowl, sprinkle them with sugar and salt, and let it stand for 15 minutes. Then, stir in red onion, red wine vinegar, and olive oil before letting the mixture chill for 2 hours. To make a similar concoction that is more finger-friendly, try these Tomato, Watermelon, and Feta Skewers with Mint and Lime.

Another way to serve up watermelon is in a refreshing summer salsa. This recipe pairs Watermelon-Jalapeno salsa with marinated grilled chicken breasts to create a light, colorful, and flavorful dish. If you’re more of a steak-lover, watermelon salsa also pairs well with Grilled Molasses Flank Steak.

Last, but definitely not least, you have to try these Watermelon Margaritas. Blend watermelon, tequila, Triple Sec, and lime juice, and then garnish with lime wedges or melon balls to prepare this refreshingly sweet treat for summertime sipping. (P.S. One glass is just 105 calories!)
