What’s not to love about watermelon? The sweet, juicy fruit is perfect for backyard cookouts, beach days, and pool parties. Though it doesn’t get much better than a simple slice of watermelon, I’d like to encourage you to explore all the wonders of watermelon this summer. With the right recipe, you can serve watermelon as a snack, salad, entrée, dessert, or even as a cocktail. You might be hesitant to mix the sweet taste of watermelon with other food flavors, but trust me; it’s worth the risk.
One of my favorite summer salads is this Tomato-And-Watermelon Salad. Doesn’t it just scream summer? To prepare this salad, just combine watermelon and tomatoes in a large bowl, sprinkle them with sugar and salt, and let it stand for 15 minutes. Then, stir in red onion, red wine vinegar, and olive oil before letting the mixture chill for 2 hours.
