You’ve heard of it before, maybe even tasted it before, but for anyone unaccustomed to fennel, it can seem like a daunting ingredient to prepare. Fennel is a perennial herb that grows from a bulb-like base with stalks, yellow flowers, and feathery leaves. It has been touted to have many health benefits, such as aiding indigestion and normalizing blood pressure. To prepare this herb before cooking, make sure to cut the stalks from the bulb, and then use a sharp  knife to slice the bulb down lengthwise to get nice even slices.
