Hummingbird Cake

In case you missed it, Friday was the first day of spring! With warmer weather on the horizon, now is the time of year when you start seeing pretty layer cakes, artistically dyed eggs, fragrant flower arrangements, and pastel-colored candies at nearly every turn. People are stepping out in spring fashions and working on their tans over spring break. The world is fresh and new again.

Layer cakes are the perfect way to celebrate the onset of spring, and you can’t go wrong with the most requested recipe EVER from Southern Living magazine. Hummingbird cake features a unique combination of crushed pineapple, pecans, and bananas that has been making Southern bakers famous for generations. Topped off with swirls of cream cheese frosting and a few handfuls of toasted pecans, it’s a lovely sight to behold at any spring fete. Prepare to receive rave reviews!
