Kale escalated in popularity in 2014, and even has a national day in it’s honor. What’s so great about kale anyway? Well, if you’ve ever tried it crisped in the oven or blended into a smoothie, you’ll see what all of the hubbub is about. I personally enjoy kale in my green smoothie every morning. This green leaf is versatile, mild flavored, and packed with nutrients. More bold than sautéed spinach, sautéed kale works well when mixed with other flavorful options, such as in the recipe listed above.
