Quinoa Tabbouleh

 

By now, you’ve probably heard of and even tried the awesome and versatile grain that is quinoa (pronounced: “keen-wah”). Quinoa is an ancient grain that cooks up like rice but tastes and has a texture that’s a lot more like couscous. This grain also provides plenty of nutritional value with high amounts of magnesium, iron, and omega 3 fatty acids.

Cooking up this grain is a snap, simply cook the rice in boiling water for 20 minutes and then add the fresh ingredients for a light and airy side to any entree. Personally I’ve also combined salsa or guacamole to these ingredients to create a decadent dip for tortilla chips. This is a must try dish for anyone looking to up their nutritional goals this year.
