In the world of veggies, rutabaga has been sadly overlooked. When have you ever heard someone say that rutabaga is their favorite vegetable? And you’d probably pass out from shock if your little ones ever demanded rutabaga for dinner. The funky-looking root vegetable, sometimes called the yellow turnip, is technically a direct cross between turnips and cabbage. Like many root veggies, rutabagas shine when roasted, with a sweet yet savory flavor and a gorgeous golden hue.
Rutabagas are less starchy than potatoes, but equally delicious and a good source of potassium and vitamin C. I’ve shared two videos below–the first on how to prepare rutabagas (which is actually quite easy!) and the other a recipe for Maple-Glazed Rutabaga. Enjoy!
