Spinach and Ricotta-Stuffed Shells

When I was little, I would relentlessly ask my mother the proverbial question all mothers must answer, “What’s for dinner?” I’d cross my fingers and hope and pray that she would respond with the best answer of all: stuffed shells. I mean, all kids love pasta, but stuffed shells are in another category entirely, kind of like manicotti and lasagna. It’s the classic combination of cheese, marinara sauce, and carbs (with some veggies thrown in for good measure) that gives our bellies that sweet satisfaction it craves.

My mom used frozen stuffed shells, but this recipe does it all by hand, right down to the marinara sauce. All right, it uses store-bought pasta shells rather than handmade, but it’s okay to cut corners sometimes, right? Serve it with green beans or a simple salad, and you’ve got an easy weeknight meal that’s sure to become a staple in your rotation. If your kids are anything like I was, they’ll be crossing their fingers and hoping and praying that stuffed shells end up on their plates for many nights to come.
