Cake of the Week: Cranberry-Apple-Pumpkin Bundt

Is it too early to think about Thanksgiving? Are you planning your decorations, tablescapes, and menus? Because this Cranberry-Apple-Pumpkin Bundt is one cake that definitely needs to be on your list of things-to-make. The title just screams Thanksgiving to me, but it would be perfect any time of the holiday season!

The great thing about bundt cakes is how easy they are. You don’t have to worry about frosting multiple layers or washing up tons of dishes afterwards. The whole cake bakes in one pan, and because bundt cakes are always better with some glaze, the glaze is whipped up in one bowl.

This cake is full of all kinds of incredible fall flavors. Toasted pecans, chopped apples, dried cranberries, pumpkin, and pumpkin spice come together in this recipe to create a cake full of warm and comforting tastes and scents. As you can see in the photo, there is a secret layer of goodness in the middle of this cake. After pouring half of the batter into a bundt pan, the apples, cranberries, and pecans are sprinkled on top. Then the rest of the batter is layered on top of that.

To complete this festive Thanksgiving cake, whisk together the maple glaze and spoon it over the top. Then add the sugared pecans and pepitas, and you’ll have the perfect ending to a delicious Thanksgiving meal.
