Mmm, tortas. If you know what I’m talking about, your mouth is probably watering already. The Mexican sandwich known as “torta” is a hearty stack of meat, beans, or eggs smashed between a crusty white roll. It can be eaten hot or cold, and traditional accompaniments include avocado, jalapeño, onion, and tomato. Sandwiches are the most practical form of lunch in many countries due to their hand-held nature. In Mexico, you can find tortas at restaurants, food carts, ball games, and outdoor concerts. The sandwich’s popularity is widespread, and for good reason.
Cooking Light came up with their recipe for Seared Pork Tortas in an attempt to make the beloved sandwich healthier, using lean pork loin, fresh salsa, pinto beans, and veggies. It’s ready in just 20 minutes, so you can enjoy the sandwich as a quick and easy meal any night of the week. They hollow out the insides of the bread, which is a good trick to keep in your back pocket whenever you want to make a sandwich lighter and less “bready”. The leftover bread doesn’t have to go to waste; simply place it in a food processor and process into crumbs. Freeze the crumbs until you need them for another recipe.
