We’re finally beginning to see some cooler weather here in the South, and it’s kind of exciting. I’ve been holding out on some fall recipes because it just hasn’t felt like fall here. But now I need a jacket in the mornings and evenings, and I’ve dug my scarves and boots out of my closet. Thankfully, this means that it’s also time for soups and stews. You’re definitely going to want to add this recipe for Cheesy Potato Soup to your list of fall staples because it’s ready in just 30 minutes!
This soup begins by making a simple roux. This helps thicken it up without adding tons of extra and unnecessary calories. After the onions and roux have cooked for a couple minutes, you’ll add milk, water, chicken broth, and chopped potatoes. These ingredients make up the base of the soup, and after they’ve simmered for about 10 minutes (you could go a little longer here if you want to make your soup even thicker), you just add in the cheese and a pinch of ground red pepper. Let the cheese melt, and you’re ready to enjoy some comfort food!
This is a simple soup, so in addition to the ingredients called for, you can add in anything else you want. I personally would throw some bacon in there just because bacon is pretty good in everything. You can also see in the photo above that the soup is sprinkled with green onions.
