Sandwich School: Grilled Pimiento Cheese

Today I’m bringing you the Grilled Pimiento Cheese, a Southern update on the childhood classic. I personally am not a very big fan of sandwiches with soft bread. I love them when they’re toasted or grilled and have a nice little crunch.

This Southern version of grilled cheese sandwiches has the same gooey cheese in the middle, but that cheese is also filled with pimientos, mayonnaise, a sprinkle of shredded onion, and a splash of Worcestershire sauce. A little mayo is spread on the bread before it goes into the skillet, which gives it that nice golden-brown color.

This sandwich can be made in about the same amount of time as a classic grilled cheese, too! The recipe does require you to mix all the ingredients together, but that’s it! So take a few minutes to try something new and combine two of your favorite sandwiches. You never know–you could have a new favorite after you try this!
