Pesto, Presto!

It’s not easy being green. That is, unless you’re basil pesto! The traditional Italian sauce consists of garlic, basil, pine nuts, olive oil, and Parmesan cheese. Its name stems from the Italian word pestare, which means to pound or to crush, in reference to the original method of making pesto using a wooden mortar and pestle. Purists can still make the vibrant sauce the old-fashioned way, but it’s even easier to whip it up in a food processor.

Pesto is incredible when stirred through hot pasta, slathered on pizza dough in place of tomato sauce, drizzled over salads, or mixed into scrambled eggs. Basil is the traditional ingredient in the herbaceous sauce, but variations exist for arugula pesto, mint pesto, and even turnip green pesto.
