The Easiest Pizza Ever

When I don’t feel like grocery shopping, I love coming up with recipes using ingredients I have on hand. One of the most successful concoctions I came up with on the fly were these easy-peasy pita pizzas:

My recipe calls for no real measurements, so just follow your instinct! These are more “guidelines” than a recipe, so feel free to be as liberal or sparing with the toppings as you wish. You really can’t mess up pizza when it’s this easy.

Pita Pizzas

Preheat oven to 425°. Brush whole wheat pita rounds with olive oil, and then top with good-quality tomato sauce, shredded fresh mozzarella, halved cherry tomatoes, and grated Parmesan cheese. Bake at 425° for 5 minutes. Top with arugula, salt, and cracked pepper.

Note: You could bake these on a pizza stone or baking sheet, but I put mine directly on the oven rack and got great results!

 

That’s it! You can have this easy meal on the table in less than 10 minutes. I served it with roasted broccolini and my husband loved it. The broccolini also bakes at 425°, so you can cook both side-by-side in the oven. The broccolini takes a little bit longer, so put it in before adding the pizzas.

 

Roasted Broccolini

Preheat oven to 425°. Toss 3/4 pound broccolini with 2 tablespoons lemon juice, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/8 teaspoon cracked pepper. Place on a baking sheet lined with parchment paper and bake at 425° for 10-15 minutes. Serves 4.

 

I will definitely be making this recipe again when I need something easy, fast, and delicious. I encourage readers to come up with your own combinations using whatever ingredients you have in the pantry. Pizza is a blank canvas, so get creative!

Here are just a few ideas:

1. Tomato sauce, mozzarella, cremini mushrooms, and bacon

2. Pesto, mozzarella, fontina, and shredded rotisserie chicken

3. Tomato sauce, mozzarella, bell peppers, olives, and sausage

As a rule of thumb, always finish off your pizzas with freshly grated Parmesan cheese. You could also add red pepper flakes or Sriracha if you like a bit of heat. I’d love to hear about your creations, so comment below with your favorites!
