The classic summer flavor of key lime can now be enjoyed in the form of cheesecake! But this Key Lime Cheesecake isn’t just any old, regular key lime dessert because it’s was created by the good people of Cooking Light. So, you can count on this creamy treat to be full of flavor and a little lighter on the sugar and calories.

Let’s talk about the crust first. It’s made with a combination of gluten-free oats and gluten-free flours. If there’s someone in your family who has a gluten allergy and you want to make a dessert that everyone can enjoy, keep this one in mind! The cheesecake filling consists of fat-free cream cheese, fat-free sour cream, and plenty of key lime flavor from lime zest and lime juice. This cheesecake still has sugar in it, which is definitely necessary when using tart key limes.

Not only is this cheesecake a little healthier than most, it’s also very easy to make! Most cheesecakes have two stages: the crust and the filling. The crust is made, baked, and cooled. Then the filling is mixed up, poured over the crust, and baked as well. The hardest part may actually be waiting for it to chill for eight hours so you can eat a slice!
