Cake of the Week: Strawberry Ice Cream Shortcakes

Strawberry shortcakes are a summer staple when it comes to desserts. Whoever decided to first pair up juicy strawberries, soft sponge cake, and whipped cream is seriously a genius. There have been many variations of strawberry shortcakes over the years, including trifles, tall cakes, and even grilled shortcake kebabs! But my favorite version this summer has been these Strawberry Ice Cream Shortcakes form Coastal Living.

Sometimes strawberry shortcakes are made with sponge cakes, and sometimes they’re made with cake that’s really closer to a biscuit. Here they’re made with the latter, which is referred to as Sweet Cakes. After the Sweet Cakes have baked and cooled, they’re layered with strawberries, a sweet syrup, and a nice scoop of vanilla ice cream. The shortcakes are finished off with a dollop of whipped cream. This is how you do shortcakes in the summer!

These would be so fun at a picnic or outdoor party. If you’re looking to save time, you could always buy shortcakes or biscuits from your grocery store and use those instead. Do not skip out on the ice cream, though. These shortcakes are what summer is all about!
