Cake of the Week: Peach Upside-Down Cake

If you went to a farmers market over the weekend, you probably saw some fresh, juicy peaches. Also you’re probably wondering what else you can make with them besides sinking your teeth right into one. That’s where this Peach Upside-Down Cake comes in. The fine folks over at Southern Living have got you covered! If you’re a fan of peach cobbler and peach pie, you’ll love this upside-down version of peach cake.


This fresh, summer cake is made in a cast iron skillet, and the recipe starts by creating a layer of caramel on the bottom of the pan. Then you arrange the peach slices in the caramel, and the cake is off to a good start! Next, prepare the batter and spoon it over the peaches. All you have to do after that is wait for the cake to bake! Top this gorgeous treat with some homemade whipped cream, and then dive into the moist cake, tender peaches, and warm caramel. That sounds like the perfect summer cake to me! Take it to a family gathering, bring it to a picnic, or enjoy a slice on a lazy summer afternoon.
