The 4th of July is almost here! Southern Living’s July issue is here though, and it features this cool and colorful Red, White, and Blue Ice-Cream Cake. You’re probably beginning to plan your 4th of July festivities, deciding what to grill, and where you’re going to watch fireworks. Or possibly how many fireworks you should buy and set off yourself! When it comes to summer desserts, especially now that it is officially summer, the cooler the better. How fun and refreshing would it be to take a bite of this ice cream cake while watching fireworks?
While it may be hard to see in the photo, there is actually some cake in this ice cream cake. This frozen treat starts with pound cake (you can make your own or buy one at the store), which is then cut into pieces and arranged in the bottom of a springform pan. Then you mix vanilla ice cream and blueberry preserves to make the “blue” layer. To make the “red” layer, raspberry preserves are stirred into raspberry sorbet, which intensifies the flavor. The ice cream cake is topped with fluffy whipped cream, a honey-raspberry sauce, and plenty of fresh berries.
If this doesn’t scream festive, I don’t know what does! Stay cool on the 4th with this frozen and creamy treat.
