A large slice of chocolate cake, while tempting, can be a little too heavy for a summer dessert. However, there is a way to have both a summer-appropriate sweet treat and have your cake at the same time. The answer is this Key Lime Icebox Cake.
Icebox cakes are basically graham crackers (or other wafer-like cookies) layered with pudding or custard. The “cake” chills in the freezer and the texture completely transforms. When the cake comes out of the freezer, the graham crackers have absorbed some of the moisture from the custard and they’ve lost some of their “snap.” They’re more cake-like, and you can think of the custard as a stand-in for frosting. Cool and creamy cake–no oven required!
This Key Lime Icebox Cake features several layers of graham crackers and a homemade Key lime custard. Key lime zest and juice are used in this custard, but regular limes can be used if Key limes aren’t available. After the cake is frozen and has thawed a little, it’s topped with a layer of fluffy homemade whipped cream and then it’s complete!
