This gives it a slight cornbread texture, which is great paired with the sweet elements of the cake. Also unlike traditional pineapple upside-down cakes, honey is poured directly into the cast iron skillet before anything else is added. Then you arrange the pineapple slices and cherries, and pour the batter over them. Once the cake has finished baking and has been turned out onto a plate, it’s drizzled with even more honey. The honey glaze is basically brown sugar and honey melted together. The cake itself isn’t too sweet, so this glaze really adds a nice touch.
