Cake of the Week: Honey-Pineapple Upside-Down Cake

Doesn’t this cake remind you of a big, yellow sun? It happens to be rainy and gray outside today, and it is Monday, so I think this Honey-Pineapple Upside-Down Cake is just what we need to start the week off right. This is also one of those cakes that can be made over and over, all summer long!

Not only does this upside-down cake have pineapples and cherries just like the classic, it’s also made with a little bit of cornmeal. This gives it a slight cornbread texture, which is great paired with the sweet elements of the cake. Also unlike traditional pineapple upside-down cakes, honey is poured directly into the cast iron skillet before anything else is added. Then you arrange the pineapple slices and cherries, and pour the batter over them. Once the cake has finished baking and has been turned out onto a plate, it’s drizzled with even more honey. The honey glaze is basically brown sugar and honey melted together. The cake itself isn’t too sweet, so this glaze really adds a nice touch.

If you’re looking for a good summer cake, definitely consider making this one! It’s easy to make, isn’t too sweet, and is full of summer fruits and flavors.
