Cake of the Week: Deep Dark Chocolate Layer Cake

Now that we’re in the month of February, you can officially start thinking about Valentine’s Day desserts and sweet treats. For example, boxes of chocolates, chocolate-covered strawberries, pink cupcakes and red velvet everything! Then there’s this Deep Dark Chocolate Layer Cake. It would be the perfect treat for any chocolate-lover.

This cake is made with a whopping 2/3 cup of cocoa powder. You read that correctly. This cake will make you forget about all other chocolate cakes. The recipe also calls for 1 1/2 cups of brewed coffee, which enhances the chocolate flavor and makes it really rich. Don’t worry, you won’t actually be able to taste any of the coffee flavor. It’s just there to boost the chocolate. On top of all that chocolate is a fluffy meringue frosting.

You could dress up this cake in many ways to give it a more Valentine’s Day vibe. You could add some pink or red food coloring to the frosting and top it with colorful Valentine’s sprinkles. I also love the idea of adding some fruit; strawberries or raspberries would add a lovely pop of color. Either way, this cake is perfect for someone special!
