This week’s cake of the week is the Banana Layer Cake. While it’s packed with fruit, this cake is rich and decadent. Just look at that caramel! This indulgent dessert starts with layers of banana cake, which are nice and moist because of the butter, maple syrup, and buttermilk. Then the cake layers are topped with a fluffy cream cheese frosting. Sliced bananas are arranged on top of the frosting, and once the whole cake has been assembled, it’s drizzled with caramel sauce. Like I said, it’s decadent.
While I love the flavors in this cake, you could even take it a step further and create a version similar to banana bread. You could add some peanut butter to the cake layers or frosting, toss in some mini chocolate chips, or swap the caramel sauce for a chocolate glaze.
Aside from the wonderful flavors, I absolutely love how this cake looks. For some reason, cakes with frosting only between the layers look so fancy and formal to me. I really love all the layers being exposed, especially with the sliced bananas and caramel sauce dripping down the sides.
