Cake of the Week: Layered Peppermint Cheesecake

I know what you’re probably thinking. There are cake layers, there are cheesecake layers, and then there’s the mousse frosting; there is a lot going on in this Layered Peppermint Cheesecake. But just think about how impressive it will look in the center of your Christmas dessert table! And just think about how it will taste!


Peppermint desserts aren’t for everyone, but there’s only a hint of it in these cheesecake layers. The recipe calls for 1/4 teaspoon of peppermint extract, so the flavor shouldn’t be overpowering or mask the other flavors. I think sour cream is definitely a good choice for the cake layers because all the other components are so sweet. Toning the sweetness down in the cake prevents the entire dessert from being too sweet or overly rich, which is helpful if you’re planning on tasting a little of everything at your family Christmas party. It can all add up so quickly! (I’m speaking from experience.) And finally, the layers are covered in a fluffy white chocolate mousse frosting! So be sure to keep all that in mind if you start to feel uneasy while reading over the ingredients and instructions. This cake is just as tasty as it looks and it will definitely impressive your holiday guests!
