Now that the holiday season is in full swing, I think it’s time we get into the holiday candy. This is really the only time of the year grocery stores are stocked with several variations of candy canes, so why not make the most of it and cover an entire cake with them? It’s only logical.
I’m a big fan of peppermint during the holidays, but I know many people aren’t. Peppermint extract seems to be much stronger than most other extracts, at least to me. This Candy Cane Cake is great because it doesn’t have an overpowering peppermint flavor. It’s really just in the candy canes. The cake is an angel food cake, and it’s suggested that you can even use a store-bought angel food cake and dress it up on your own if you need an impressive dessert in a short amount of time.
This cake is also a “light” cake and uses whipped cream in place of frosting. There is always a ton of good food during this season, so why not make desserts a little more figure-friendly if you can? Frosting can definitely be used instead of the whipped cream if that’s what you prefer. In the ratings and review section, some people even added a little splash of peppermint extract to the whipped cream and suggest drizzling sliced pieces of cake with hot fudge sauce! I like the way they think.
