On the Menu: Quick & Easy Fall Meal

Pork Tenderloin with Sauteed ApplesNow that the weather’s finally turning cooler here in Alabama, I like incorporating more seasonal flavors for our suppers, such as cinnamon, onions, pumpkin, and of course – apples!  Plus, with about a month left until deer season begins, our freezer supply of wild meat has dwindled down to nearly nothing.  So, when I needed a quick and easy weeknight meal recently, I reached for Spiced Pork Tenderloin with Sauteed Apples, one of the featured recipes in our new Easy Meal Maker cookbook.

One of the best things about pork tenderloin is that it is budget-friendly and cooks quickly.  This recipe calls for seasoning the pork with coriander, pepper, and two fall-friendly spices – cinnamon and nutmeg – cooking it on the stove, then using that same pan to saute sliced apples and sliced shallots in butter before adding a little apple cider to finish it all off.  (Who doesn’t love a great one-dish dinner?)

I love serving pork with sweet potatoes, so I microwaved a couple of sweet potatoes and topped them with plenty of butter and brown sugar.  The recipe recommends serving with a spinach salad, so I tossed some baby spinach with goat cheese, sliced pecans, sliced strawberries, and a homemade balsamic vinaigrette.  This meal was a great option for a busy weeknight with our almost-five-year-old underfoot and plenty of other chores to do!
