A couple weeks ago, I was lucky enough to accompany Anne Cain to a cooking demo at the Lakeshore Foundation. For those of you who have never heard of it, “Lakeshore is a 501(c)3 non-profit organization which serves people with physical disabilities throughout Alabama, across the country and around the world.” (Via the Lakeshore Foundation’s website.) It is a place for anyone, of any age, with any physical disability. It’s also a U.S. Olympic and Paralympic training site! Needless to say, incredible and wonderful things happen at the Lakeshore Foundation and we were so honored to be a part of the Lima Foxtrot program! Here is a little more information about Lima Foxtrot:
“Lima Foxtrot is the brand name adopted by Lakeshore to describe what has become one of this country’s premier, comprehensive, year round, sport, fitness, and recreation programs for severely injured members of our Armed Forces who were injured post 9/11. Through LIMA FOXTROT these young men and women use lessons from sport and recreation to learn how to pursue life after injury.”
Our cooking demo was part of Rise and Conquer, Lakeshore’s “signature” camp that is also supported by the Wounded Warrior Project.
For this cooking demo, we wanted to focus on quick and simple meals that can be easily changed to fit anyone’s preference. We started out with Chicken Guacamole Tostadas. This dish is great because it’s so versatile. You can make the guacamole and tomato salsa like the recipe says, or you can buy pre-made guacamole or salsa at the grocery store. Fresh ingredients can make a noticeable difference, but we wanted the audience members to have recipes that are healthy and also fit into their schedule and family time.
You don’t have to cook anything for these tostadas. This is a no-cook recipe! Rotisserie chicken makes this recipe even easier and more convenient for those who don’t have much time to cook. The audience had wonderful questions and asked us about kid-friendly versions of this dish. So, if there is a vegetarian in your family, or your child is a picky eater, you could make this meal for everyone and easily change one or two tostadas for that one family member.
We also made this Chili-Cheese Mac, which is featured on the cover of our newest bookazine, One Dish Meals. We thought it would be a good idea to bring some of these bookazines with us to show all of the participants how many easy options there are and that these recipes are definitely doable! This Chili-Cheese Mac is great because it’s extremely easy and doesn’t require much clean-up. It also has a little spicy kick to it, so it’s a fun spin on regular Mac n’ Cheese.
The camp members were able to sample both of these recipes and ask us questions afterward. It was so great to see everyone excited about cooking, eating healthy, and making meals that are healthy for the whole family. I really loved being able to talk to the participants about cooking and what works best for their families. Hopefully this is something we’ll get to do again in the future!
