I have loved this cake ever since I saw it in Southern Living two years ago. That seems like an odd amount of time because I specifically remember looking at this cake in the magazine and thinking, Whoa.
It’s technically an Ice-Cream Cake, but there are so many components to it, so many delicious layers and textures. There are the Devil’s Food cake layers, the layers of mint chocolate chip ice cream, ganache, a giant dollop of whipped cream, and a sprinkle of Andes mints. What’s not to love about this cake?
It’s beginning to look like fall in some places, but here in Alabama the temperature is still reaching into the 90s most afternoons. We all know cake and ice cream are perfect for each other, and it’s definitely still ice cream season here. Instead of having a scoop or two of ice cream alongside your cake, why not try it in your cake? It’s such a fun way to switch things up, and it makes for an impressive presentation!
