About a week ago, I was asked to make these green tomato and fig cupcakes. I’m going to go ahead and be honest. I don’t like green tomatoes or figs. I had never even seen a fig before, let alone tasted, touched, or worked with one. Obviously, there are figs in the recipe photo, but I’d never seen one in person before. They were pretty small and full of seeds, and I was very hesitant to chop them up and put them in cake batter with puréed green tomatoes. But, after having said all of that, these cupcakes were really good. The recipe also calls for cinnamon, chopped pecans, and orange rind, so there were a bunch of different flavors working together. Not only green tomatoes and figs.
I read the comments on this recipe before I made these cupcakes, and one person said that they couldn’t taste the green tomato at all. That person is completely right. There may be a slight hint of it, but the other flavors camouflage it pretty well. While the cupcakes were baking in the oven, the whole kitchen smelled like cinnamon, and I started to change my mind a little bit. Then, after I took them out of the oven, they looked like normal cupcakes! I was so surprised! I think I had imagined them in my head as actually being a green color because of the green tomatoes. The batter had a slight green tint, but the cupcakes came out nice and golden-brown.
The recipe pairs the cupcakes with a cream cheese frosting, and I love cream cheese frosting. Because there’s some cinnamon in the batter, I added a dash of it to the frosting as well. Then I sprinkled some chopped pecans on top and added some gummy candies. The candy came in all different colors, but when I saw it at the store, the green pieces looked like little halves of green tomatoes.
Overall, these cupcakes sort of taste like a spice cake. I also heard someone here at work say they tasted similar to hummingbird cake. I started out very unsure about these cupcakes in the beginning, but I really like how they turned out!
