As if I ever need an excuse to make White Chocolate Peanut Butter Bites from the Birmingham Junior League cookbook, Tables of Content, I have been in full food gift making mode this week to share with friends, family, and the people that help me out from day to day. From my coworkers, daughter’s teachers, security guards at work, our postal delivery person and even the Terminix man, I’m always guaranteed a smile when I share a bag of these salty-sweet treats.
Best of all, they are SIMPLE to make and use very few ingredients. Here’s what you need:
2 bags white chocolate chips
1 cup chunky peanut butter (note: natural doesnt work)
4 cups crispy rice cereal
3 cups mini marshmallows
1 cup dry-roasted peanuts
And how to make…
Melt white chocolate in a large microwave-safe bowl according to package directions. Stir peanut butter into melted chocolate and microwave for 20 more seconds. Stir. Add rice cereal, marshmallows, and peanuts and stir to combine until all of the cereal is well coated. Note: I often end up using my hands to “stir” to make sure everything is coated and there is no longer cereal or melted chocolate in the bottom of the bowl. Turn candy out onto a large piece of parchment paper and spread into a 1-inch layer. Allow to dry for at least 5 hours. Break into bite-sized pieces and store in an air-tight container for up to 3 days.
