Making Biscotti

Hot-chocolate1 This past Sunday, I was invited over to my friend Caroline’s house for an afternoon of decadent hot chocolate and a Christmas movie. Caroline supplied the hot chocolate (Williams-Sonoma's, highly recommended!) and I brought the accompaniment. I had never made biscotti before so I figured this would be the perfect time to try! If they didn’t turn out, I could always run to the store and grab some mini-marshmallows and candy canes.

I decided to go with Cooking Light’s Cinnamon Biscotti, a not-too-sweet recipe that would complement the hot chocolate rather than overwhelm it. Not only did they turn out wonderfully, they were also surprisingly easy to make!

For a quick primer, I turned to the MyRecipes how-to video, How to Make Biscotti before starting. Here's how I proceeded:

Dry-ingredients 1. Combine dry ingredients: flour, sugar, baking powder, cinnamon, and salt.

2. Combine wet ingredients: eggs, margarine, and vanilla.

3. Add wet ingredients to dry, stirring just until moist.

4. Turn dough out onto a lightly floured surface; knead lightly 10 times.

5. Shape dough into a 16-inch-long roll.

6. Place roll on a baking sheet coated with cooking spray; flatten to a 3/4-inch thickness.

7. Combine 2 tablespoons sugar and 1/2 teaspoon cinnamon; sprinkle over dough (mmmm!)

8. Bake at 325° for 30 minutes. Remove roll from baking sheet; let cool 10 minutes on a wire rack.

9. Cut roll diagonally into slices. (Mine were about 1/2- to 3/4-in.-thick)

10. Place, cut sides down, on a baking sheet. Bake at 325° for 10 minutes. Turn cookies over; bake an additional 10 minutes.

11. Remove from baking sheet; let cool completely on a wire rack.

 12. Enjoy!

If you’ve never made biscotti before, I definitely recommend you try it! Plus, it makes great homemade holiday gifts (package with a cute mug and some coffee, hot chocolate, or chai tea and ta-da!).

    My first biscotti recipe was from Giada de Laurentis with the biscotti covered in white chocolate and colored sugar. I plan to make it again this year with a choice of regular chocolate and white chocolate. Maybe I’ll use crushed candy canes too? I love choices!!
