Its gingery, buttery, juicy, awesomeness is the season incarnate. The apples
and pears, at the peak of their season, are the heart of the matter. I suggest
after flipping the tart over to try topping with a little brown sugar and
putting under the broiler to give everything a nice caramel color. Skip the ice
