Happy Hour: The Paloma

At the risk of an intervention, I am once again writing about cocktails.  Last time, it was a martini craving that inspired me.

Today, it is the Paloma.  The fruity, fizzy, tequila-based Paloma has become my favorite drink to accompany Mexican recipes.  Palomas couldn't be simpler to make:  tequila + grapefruit soda (think Fresca) + a lime wedge.  No Fresca?  You can substitute grapefruit juice and club soda for the grapefruit soda. 

The Paloma is smoother than any margarita, never requires a blender, and the tiny bubbles make it super-refreshing.
