I’m always searching for lightened recipes that taste just as good, if not better, than their full-fat counterparts. I’ve had quite a bit of luck over the years but I still struggle to find the perfect low-fat cream sauce that doesn’t turn into glop or glue after just a few minutes. Creamy Cajun Shrimp Linguine from Cooking Light has just the sauce.
I recently filmed the Dinner Tonight video for this recipe and even after it stood on set for about 15 minutes, the sauce was still creamy (versus turning to concrete). The crew ate it up without a single complaint. In fact, they were fighting over who would take home the leftovers (sadly, there were none left).
